Aldo Zilli - Fish
Ingredients for the dressing
Red peppers
Garlic
Chilli Oil
2 sprigs of Thyme
2 sprigs of Rosemary
Sea Salt
1 Lemon

4x Fish with skin on - Makerell / Sea Bream
Butter
Corriander
Thyme, Rosemary, Garlic & Basil
1 Lemon
Method
For the Dressing
- Put the peppers into the pan and then add the chilli oil and garlic altogether
- Add rosemary and thyme
- Finally sprinkle a dash of sea salt into the dressing mixture
- Put the pan onto the fire and cook
- Finally add the lemon for a little zing.
FISH - Mackerel
- Stuff the mackerel with the butter, chilli, lemon and coriander
- Wrap the mackerel to secure the ingredients inside
FISH – Seabream
- Score the skin of the seabream and add garlic into the scores
- Using a pestle and mortar mix thyme, rosemary, garlic and basil
- Add olive oil and lemon to turn it into a paste
- Cut the fish along its length and push the paste inside the fish
- Sprinkle sea salt over the fish and add to the BBQ
