Aldo Zilli - Fish


Ingredients for the dressing

Red peppers


Chilli Oil

2 sprigs of Thyme

2 sprigs of Rosemary

Sea Salt

1 Lemon


Main Ingredients

4x Fish with skin on - Makerell / Sea Bream



Thyme, Rosemary, Garlic & Basil

1 Lemon



For the Dressing


  1. Put the peppers into the pan and then add the chilli oil and garlic altogether 
  2. Add rosemary and thyme
  3. Finally sprinkle a dash of sea salt into the dressing mixture
  4. Put the pan onto the fire and cook 
  5. Finally add the lemon for a little zing.

FISH - Mackerel


  1. Stuff the mackerel with the butter, chilli, lemon and coriander 
  2. Wrap the mackerel to secure the ingredients inside

FISH – Seabream


  1. Score the skin of the seabream and add garlic into the scores
  2. Using a pestle and mortar mix thyme, rosemary, garlic and basil
  3. Add olive oil and lemon to turn it into a paste
  4. Cut the fish along its length and push the paste inside the fish
  5. Sprinkle sea salt over the fish and add to the BBQ
